A BBQ Spice Rub is any mixture of ground spices that is made for the purpose of being rubbed on raw food before the food is cooked. The spice rub forms a coat on the food. Once you have the spices mixed into your blend, you literally rub it by hand all over your protein to coat it thoroughly. The rub itself is a dry application of spice. If you mix it with an oil, you can create a paste. Adding an acid such as vinegar or fruit juice will turn it into a marinade.

Once you have rubbed on the spice blend, I love to let it sit and marinate for a while. Usually four to eight hours of time in the mixture will allow the flavors to marry and really build the flavors. Make sure you do this in a sealed container or zipper seal bag and keep it in the refrigerator until you are ready to cook.

Dak’s Red Mountain Rub

Chicken was the choice I made to try out the Dak’s Red Mountain Rub. In addition to the usual wonderful smoky heat flavors, it also has granulated molasses and demerara sugar which really caramelized nicely on the grill. I let the rub sit on the chicken for 6 hours before I took it out to the grill. The sweetness of the molasses and sugar tone down the chipotle pepper. My kids loved the fact that it wasn’t too spicy. The final result? Dak’s has another winner here! If you want the best flavors of salt free spices, I can’t recommend Dak’s highly enough!
