- 1/2 cup Onion - chopped
- 1/2 cup Bell Pepper - chopped pick your favorite flavor
- 1/3 cup Cilantro - chopped
- 2 Tbsp Jalapeno Pepper - seeded & minced
- 2 tsp Cumin - ground
- 2 tsp Chili Powder - salt free
- 1/ tsp Black Pepper - ground
- 4 Corn Taco Shells - crushed Salt free
- 2 Egg Whites
- 3 Cloves Garlic - minced
- 1 15 oz Can Black Beans or 2 Cups Cooked Black Beans no salt added
- 2 Lbs Fresh Ground Turkey - lowest sodium by label
- 1 cup Low Sodium Mozzarella or Swiss cheese - grated optional as a topping
Combine ingredients (except cheese) together in a large food processor or large bowl and mix well.
Spray the bottom of your crockpot with non stick cooking spray.
Lay your foil strips crosswise to create basket.
Cook at high for 2 hours then at low for 2-3 hours until loaf has cooked to 165 degrees F.
Lift out of the crockpot carefully in your foil basket, place on serving tray, remove the foil strips, add cheese (if using), and allow the loaf to rest 10 minutes.
