Method
- In a small mixing bowl, add the tomatoes, onions, garlic, pepper, olive oil, and balsamic vinegar.
- Mix until they are thoroughly coated in the vinegar and oil
- Lay the crackers out on your serving platter and spread approx 1/4 tsp of Marscapone on each so they are lightly coated.
- Top the cheese with a small teaspoon full of the bruschetta mix.
- Sprinkle the ribbons of fresh basil over the top and serve immediately.
